Pesto and Onion Pasta

Dry roast the dried Shiitake mushrooms and pistachio nuts on medium heat for a few seconds.
Boil a pot of water and add 2 teaspoons of coil. Cook the wholewheat pasta for 5 minutes. Strain and set aside.
Heat the olive oil in a pan over medium flame. Add in the chopped green onions and stir fry until aromatic. Remove the green onions, leave aside to cool down.
In a blender, blend the Shiitake mushrooms, pistachio nuts and green onions into a fine paste.
In the same pan, add in the paste and stir fry till fragrant. Add water if necessary.
Plate the cooked wholewheat pasta and serve with the cooked pesto.
