Adlai Salad

INGREDIENTS

1 cup - Job's Tears grain (Adlai)


2 cups - Water


5 leaves (outer part) - Romaine lettuce, coarsely chopped


2 pcs - Medium sized tomatoes, coarsely chopped


4 sprigs - Coriander, finely chopped


Balsamic Vinaigrette Dressing:


4 tbsp - Olive oil


2 tbsp - Balsamic vinegar


⅛ tsp - Salt


⅛ tsp - Freshly ground black pepper

UTENSILS

Measuring cups and spoons, chopping board, knife, pressure cooker, and mixing bowl.

INSTRUCTIONS

1. Wash the adlai. Put the washed   adlai in the pressure cooker, add the water and set to high manual pressure   for 20 mins. Once done, quickly release the sealing vent and wait for the   float valve to depress before opening.


2. Transfer the cooked adlai into a   mixing bowl and let it cool. Use a dry towel and dab off any excess moisture.


3. Slice the vegetables according to   the specified cut. Set the vegetable aside in a large salad bowl.


4. Add the cooled adlai to the salad bowl.


Balsamic Vinaigrette Dressing:


1. Combine all the ingredients for   the dressing in a mixing bowl and mix well.


To plate:


1. Add the balsamic vinaigrette to   the adlai and vegetables. Toss until everything is well mixed. Serve.
