
Apple Coleslaw

INGREDIENTS
3 cups - Red cabbage, shredded
1 - Red capsicum, diced
1 - Apple, grated
1 cup - Coriander leaves, chopped
2 tb - Apple cider vinegar
2 tsp - Dijon mustard
3 tb - Mayonnaise, low fat
2 tsp - Extra virgin olive oil
UTENSILS
Bowl, Chopping board, Knife
INSTRUCTIONS
1. Combine the cabbage, capsicum, apple and coriander in a bowl.
2. Combine the vinegar, mustard, mayonnaise and olive oil in a bowl. Drizzle the dressing over the vegetables and toss to combine.
3. Serve.
