
Avocado, Jicama and Orange Salad

INGREDIENTS
2 tb - Olive oil
1 tb - Lime juice
1 clove - Garlic, minced
1 ½ tsp - White vinegar
¼ tsp - Ground cumin
¼ tsp - Salt
⅛ tsp - Chili powder
250g - Jicama, peeled and cut into small strips
2 - Oranges, peeled and cut into sections
1 - Avocado, cut into small chunks
½ - Red onion, thinly sliced
4 cups - Romaine lettuce, torn
UTENSILS
Bowls, Whisk, Chopping board, Knife
INSTRUCTIONS
1. Whisk together the oil, lime juice, cumin, garlic, vinegar, salt and chili powder in a bowl. Set aside.
2. Toss together the jicama, oranges, avocado, onion and vinaigrette in a large bowl. Refrigerate for 15 minutes.
3. Serve the salad on a bed of romaine leaves.
