Barley Salad with Brie

INGREDIENTS

40g - Brie cheese, cubed


2 cups - Mesclun salad


1 ½ tb - Cider vinegar


1 tb - Olive oil


1 pinch - Salt


1 cup - Pearled barley (soaked for 12 hours)

UTENSILS

Small bowl, Pot, Mixing bowl, Chopping board, Knife

INSTRUCTIONS

1. In a small bowl, whisk together the cider vinegar, oil and salt. Set aside.


2. In a pot, boil the pre-soaked pearled barley for 20 minutes until tender. Drain and let cool slightly.


3. In a large mixing bowl, combine the mesclun salad mix, cooked barley and Brie cheese.


4. Drizzle with the prepared vinaigrette and toss gently to combine.


5. Serve immediately.
