
Broccoli Garlic Soup

INGREDIENTS
6 cups - Broccoli, chopped
1 - Onion, chopped
10 cloves - Garlic, chopped
1 tb - Vegetable oil
6 cups - Water
½ tsp - Salt
1 sprig - Parsley, chopped
1 tb - Scallions, finely chopped
UTENSILS
Stockpot, Hand blender, Chopping board, Knife
INSTRUCTIONS
1. Heat the oil in a stockpot over medium heat. Sauté the onion and garlic for 3 minutes.
2. Add the broccoli and water. Simmer for 20 minutes until tender.
3. Purée the mixture using a hand blender. Add the salt. Stir to mix well.
4. Garnish with parsley and scallions.
