
Broiled Salmon with Corn and Peas

INGREDIENTS
360g - Salmon fillet, raw, cut into 4 pieces
¼ cup - Mayonnaise, reduced fat
1 ½ tsp - Sriracha chili sauce
¼ tsp - Salt
1 cup - Corn kernels, frozen, thawed
1 cup - Green peas, frozen, thawed
½ pc - Lime, cut into 4
1 pc - Avocado, diced
UTENSILS
Broiler, Baking dish, Bowls, Chopping board, Knife
INSTRUCTIONS
1. Preheat the broiler to 260 degrees Celcius.
2. Combine the corn, peas and avocado in a bowl. Set aside.
3. Combine the mayonnaise, sriracha chili sauce and salt in a small bowl.
4. Spread a thin layer of the sauce over the bottom of a rectangular baking dish using a spoon. Place the fish on top, then spread the remaining sauce evenly over the top of the fish.
5. Add the vegetable mixture on top.
6. Cook the fish in the preheated broiler until the fish is cooked through and the mixed vegetables are slightly charred for about 10 minutes.
7. Dish out and serve with lime wedges.
