
Brown Rice and Spinach Pilaf

INGREDIENTS
1 cup - Brown rice, uncooked
2½ cups - Water
1 tb - Vegetable oil
1 - Onion, finely chopped
2 cloves - Garlic, minced
2 cups - Spinach, chopped
½ cup - Carrots, diced
¼ tsp - Salt
¼ tsp - Black pepper
¼ tsp - Cumin
UTENSILS
Saucepan with lid, Knife, Chopping board
INSTRUCTIONS
1. Heat the oil in a saucepan over medium heat.
2. Add the onion and sauté for 3–4 minutes until soft.
3. Stir in the garlic and cook for 30 seconds.
4. Add the carrots, rice, water, salt and cumin.
5. Bring to a boil. Cover and simmer on low heat for 20–25 minutes until the rice is tender.
6. Stir in the spinach. Cover and let sit for 5 minutes.
7. Fluff with a fork and serve.
