Carob Pudding with Fresh Mixed Berries

INGREDIENTS

12 sachet - Sweetener, herbal extract powder from stevia leaf


¼ cup - Carob flour


⅛ cup - Cornstarch


¼ tsp - Salt, table


2 cup - Soy milk, plain, low fat


1 tb - Butter, without salt


1 tsp - Vanilla extract


½ cup - Mixed berries, fresh


4 tb - Nuts, pistachios, roasted, unsalted, coarsely chopped

UTENSILS

Saucepan, Ramekins, Chopping board, Knife

INSTRUCTIONS

1. Combine the stevia powder, carob flour, cornstarch and salt in a saucepan. Mix well.


2. Gradually add the low-fat soy milk. Bring the mixture to a boil.


3. Simmer for 2 mins while stirring constantly. Remove from heat.


4. Stir in butter and vanilla extract.


5. Pour into heatproof ramekins. Let it cool and top with mixed berries and chopped pistachios. Serve.
