
Chard Soup

INGREDIENTS
2 tb - Vegetable oil
1 - Onion, chopped
3 - Potatoes, peeled and thinly sliced
5 cups - Chard, stems removed
5 cups - Water
¼ tsp - Salt
1 lemon - Lemon juice
⅓ cup - Sour cream, low fat
UTENSILS
Soup pot, Blender, Chopping board, Knife
INSTRUCTIONS
1. Heat the oil in a soup pot over medium-high heat. Add the onion and potatoes. Cook until softened and lightly caramelized for 8-10 minutes.
2. Add the chard and salt. Cook for 3 minutes.
3. Add the water to the pot. Bring to a boil, then lower and simmer for 15 minutes.
4. Blend the soup until smooth using a blender. Return the soup to the pot.
5. Add lemon juice. Mix well.
6. Add the sour cream and swirl into the soup before serving.
