Chicken, Apple and Arugula Salad

INGREDIENTS

300g - Chicken breast, skinless, raw, thinly sliced


¼ tsp - Table salt


¼ tsp - Black pepper


1 tb - Canola oil cooking spray


1 medium - Apple, raw, cut into 1 cm cube


2 tb - Raisins


1 pc - Medium avocado, raw, sliced into 1cm thick


4 cups - Arugula, raw, coarsely chopped


50g - Pecan nuts, dry roasted, without salt added, coarsely chopped


4 tb - Honey mustard dressing

UTENSILS

Non-stick grill pan, Paper towel, Chopping board, Knife

INSTRUCTIONS

1. Season the sliced chicken with salt and pepper. Set aside.


2. Heat a non-stick grill pan over medium-high heat and spray with the canola cooking spray.


3. Add the chickenand grill until the chicken is cooked through. Dab the excess oil using a paper towel and set aside.


4. Arrange the arugula leaves on the serving plates and top with the apple, raisins, grilled chicken, avocado and pecan nuts.


5. Drizzle with the honey mustard dressing. Serve.
