Chicken Waldorf Salad

2 pcs - Large, apple green, unpeeled
1 can (5 oz) - Chicken, canned, meat only, drained
1 cup - Grapes, red
¼ cup - Raisins, seedless
½ cup - Celery, fresh
½ tb - Lemon juice, raw
⅓ cup - Mayonnaise, reduced-calorie or diet, cholesterol-free
60g - Yogurt, Greek, plain, non-fat
2 tb - Cheese, ricotta, reduced fat
½ tb - Sugars, maple
¼ cup - Nuts, almonds, roasted, without skin, unsalted

1. Combine the apple, chicken, grapes, raisin, celery and lemon juice in a large bowl. Set aside.
2. Mix the low-calorie mayonnaise, Greek yoghurt, ricotta cheese and maple sugar together in another bowl.
3. Pour the mayonnaise dressing over the fruit mixture and toss to coat evenly. Cover and refrigerate before serving.
4. Just before serving, sprinkle with roasted chopped almonds on top.
