
Chickpea and Tomato Salad

INGREDIENTS
1½ cups - Chickpeas, canned, drained and rinsed
2 - Tomatoes, chopped
1 - Red onion, finely chopped
¼ cup - Fresh parsley, chopped
1½ tb - Olive oil
1 tb - Lemon juice
½ tsp - Salt
¼ tsp - Black pepper
¼ tsp - Paprika
UTENSILS
Mixing bowls, Chopping board, Knife
INSTRUCTIONS
1. Add the chickpeas, tomatoes, onion and parsley to a mixing bowl.
2. In a small bowl, whisk the olive oil, lemon juice, salt, pepper and paprika.
3. Pour the dressing over the salad. Toss gently.
4. Serve immediately or chill for 15–30 minutes.
