
Couscous Avocado Salad with Lemon Chia Dressing

INGREDIENTS
½ cup - Couscous, dry
¾ cup - Water
2 pcs - Medium tomatoes, red, ripe
2 cup - Chicory greens, raw
1 cup - Plums, dried (prunes), without added sugar
2 tb - Lemon juice, raw
2 tb - Oil, olive, extra virgin
2 tsp - Seeds, chia, dried
¼ tsp - Salt, table
2 pcs - Small avocado, raw
50g - Cheese, goat, semisoft type
UTENSILS
Chopping board , Knife, Cooking pot with lid, Bowl
INSTRUCTIONS
1. Boil the water in a cooking pot. Stir in the couscous, cover and turn off the heat. Leave the couscous covered until all the liquid is absorbed. Fluff the cooked couscous with a fork. Set aside.
2. Combine the lemon juice, chia seeds, extra virgin olive oil, salt and pepper in a bowl. Set aside.
3. Combine the cooked couscous, tomatoes, chicory greens and dried plums in a bowl.
4. Add the lemon chia dressing to the couscous mixture and toss to coat evenly.
5. Arrange the sliced avocado in the serving plates and top with the couscous mixture.
6. Garnish with crumbled goat cheese and serve.
