
Couscous Salad with Pear, Walnuts and Mint

INGREDIENTS
½ cup - Couscous, dried
½ cup - Boiling water
1 - Pear, ripe, diced
10 - Cherries, dried
3 tb - Walnuts, toasted, roughly chopped
1 - Cucumber, diced
½ cup - Feta cheese, crumbled
4 tb - Fresh mint, chopped
2 - Scallions, thinly sliced
Dressing ingredients
2 tb - Olive oil
2 tb - Lemon juice
1 tsp - Dijon mustard
1 tsp - Honey
1 pinch - Salt
1 pinch - Black pepper
UTENSILS
Bowls, Whisk, Chopping board, Knife
INSTRUCTIONS
1. Place the couscous in a bowl. Pour 1 cup of boiling water, cover, and let it sit for 5 minutes. Fluff with a fork and let cool.
2. Whisk together the olive oil, lemon juice, mustard, honey, salt and pepper.
3. In a large bowl, combine the couscous, pear, cherries, cucumber, scallions, mint and walnuts.
4. Pour over the dressing and toss gently to coat.
5. Top with the feta. Serve.
