Couscous with Pork and Pineapple Salsa

INGREDIENTS

1 cup - Pineapple juice, unsweetened


1 cup - Couscous, uncooked


2 cups - Pineapple (fresh or tinned), chopped


½ - Red onion, finely diced


1 - Red capsicum, diced


1 - Avocado, diced


⅓ cup - Fresh coriander, chopped


2 tsp - Lime juice


1 tsp - Chili flakes


1 tb - Vegetable oil


300g - Lean pork tenderloin, cut crosswise into ½ -inch thick slices


¼ tsp - Salt


¼ tsp - Black pepper

UTENSILS

Pot, Frying pan, Cling wrap, Bowl, Chopping board, Knife

INSTRUCTIONS

1. Season both sides of the pork slices with salt and pepper.


2. Boil the pineapple juice in a pot.


3. Pour the hot pineapple juice over the couscous in a bowl. Cover with the cling wrap and set aside. When the liquid has been absorbed, fluff it with a fork and set aside.


4. Combine the pineapple pieces, onion, capsicum, avocado, coriander, lime juice and chili flakes in a bowl. Toss together. Set aside.


5. Heat the oil in a frying pan over medium heat. Cook the pork slices until they turn brown on both sides.


6. Toss the couscous with the salsa and serve with the pork.
