
Date and Walnut Muffins

INGREDIENTS
2 cups - Wholemeal flour
130g - Dates, pitted and chopped
80g - Walnuts, chopped
1 tb - Baking powder
1 tsp - Ground cinnamon
2 - Eggs, beaten
100g - Apple puree
100ml - Milk, low fat
70ml - Canola oil
UTENSILS
Bowl, Muffin tin, Whisk, Oven, Container, Chopping board, Knife
INSTRUCTIONS
1. Preheat the oven to 190 degrees Celsius. Oil a muffin tin.
2. Mix all the dry ingredients in a large bowl.
3. Beat the eggs with the apple purée, milk and oil in a bowl. Pour over the dry ingredients. Mix well, then spoon into the prepared muffin tin.
4. Bake for 25 minutes until the muffins are cooked through and a skewer inserted into the centre comes out clean.
5. Serve immediately.
