Easy Chicken and Wild Rice Mix

INGREDIENTS

360g - Chicken breast, skinless, boneless, raw


¼ tsp - Salt


¼ tsp - Black pepper


½ tsp - Paprika


½ tsp - Thyme, dried


½ tsp - Oregano


2 tb - Canola oil


1 pc - Small onion


3 pcs - Garlic cloves


3 tb - Tomato paste, no added salt


2 cup - Wild rice, uncooked


1 ½ cups - Chicken broth, less sodium


1 ½ cups - Water


2 tb - Spring onion

UTENSILS

Instant pot, Chopping board, Knife

INSTRUCTIONS

1. Season the chicken with salt, black pepper, paprika, thyme and oregano and set aside.


2. Set the instant pot in sauté mode. Heat the oil and add the seasoned chicken.


3. Sear the chicken until golden brown for 3 minutes on each side. Remove the chicken from the pot and set aside.


4. Add the garlic and onion. Sauté for 1 minute. Add the tomato paste and sauté for another minute.


5. Add the rice, low sodium chicken broth and water. Stir to combine.


6. Add the seared chicken on top of the rice. Close the lid and set the instant pot to high pressure for 5 minutes.


7. Make sure to release first the pressure before opening the lid.


8. Remove the chicken and cut into strips. Fluff the rice and transfer to serving plates and garnish with spring onions. Serve with the sliced chicken.
