
Filipino Vegetable Stew

INGREDIENTS
100g - Lean pork, cut into 1-inch strips
¼ tsp - Salt
¼ tsp - Black pepper
1 cup - Squash, sliced
1 cup - Eggplant, sliced
1 cup - Okra, sliced
1 cup - Bitter melon, sliced
1 cup - French beans, sliced
1 - Onion, chopped
2 cloves - Garlic, minced
2 - Tomatoes, chopped
1 tb - Fermented shrimp paste (Bagoong)
1 cup - Water
1 tb - Cooking oil

Pot, Chopping board, Knife
INSTRUCTIONS
1. Heat the oil in a pot over medium heat. Add the onion and garlic. Cook, stirring regularly, until softened.
2. Add the pork slices. Cook for 5 minutes until lightly browned.
3. Add the shrimp paste and continue to cook, stirring occasionally, until it begins to brown.
4. Add the tomatoes. Cook, mashing with the back of a spoon until softened and juice released.
5. Add the water and bring it to a boil. Lower the heat, cover, and cook for 10 minutes until the meat is tender.
6. Add the squash and cook for 5 minutes.
7. Add the French beans, eggplant, bitter melon and okra. Cook for another 5 minutes.
8. Season with the salt and pepper. Serve hot.
