INGREDIENTS
2 slices - Wholegrain breads
1 cup - Cabbage, thinly sliced
½ - Carrot, thinly sliced
¼ - Onion, thinly sliced
1 - Scallion, thinly sliced diagonally
1 - Egg
1 pinch - Salt
1 pinch - Black pepper
½ tb - Butter, unsalted
½ tsp - Ketchup
UTENSILS
Large non-stick pan, Bowl, Spatula, Chopping board, Knife
INSTRUCTIONS
1. In a large non-stick pan, melt ¼ teaspoon of butter over medium heat. Place both slices of the bread on the pan. Toast until golden brown on each side. Transfer to a plate.
2. Place the cabbage, carrot, onion, scallion, egg and salt in a bowl. Stir to mix well.
3. Add the remaining butter over medium heat in the same pan. Add the egg mixture to the centre of the pan. Flatten it to a large round piece using a spatula. Cook the mixture for 3 minutes until it turns lightly golden. Flip it over and cook the other side for about 2 minutes.
4. Place the omelette on one piece of bread. Top with the ketchup and place the other slice of bread on top. Serve.
