Grilled Chicken Hawaiian Bowl

INGREDIENTS
⅔ cup - Brown rice, cooked
2 pcs - Pineapple, sliced
2 tb - Red pepper, cubed
2 tb - Red onion, cubed
25g - Green zucchini, cubed
2 spray - Olive oil cooking spray
90g - Chicken breast, without skin
1 dash - Salt
1 pinch - Black pepper
Lemon honey soy sauce
1 tb - Soy sauce, reduced salt
1 tsp - Lemon juice
1 tsp - Honey
1 tsp - Canola oil
⅛ tsp - Chili flakes
UTENSILS
Small bowl, Non-stick grilling pan, Chopping board, Knife
INSTRUCTIONS
1. In a small bowl, combine the soy sauce, lemon juice, honey, canola oil and chili flakes. Stir until well combined and set aside.
2. Preheat a grill pan to medium heat. Coat grill grates with olive oil cooking spray.
3. Add the pineapple and grill for 2-3 minutes on each side. Set aside.
4. In the same grill pan, grill the red pepper, onion and zucchini for 2- 3 minutes. Set aside.
5. Season the chicken breast with salt and pepper. Grill the chicken in the same grill pan over medium heat for 8-10 minutes per side or until the centre is no longer pink.
6. Scoop the cooked brown rice in a serving bowl. Arrange the grilled chicken, pineapple, red pepper, onion and zucchini on the brown rice.
7. Drizzle with the lemon honey soy sauce and serve.
