Grilled Tuna with Chickpea and Spinach Salad

INGREDIENTS

1 tb - Canola oil


3 cloves - Garlic, minced


2 tb - Lemon juice


1 - Oregano, dried


200g - Tuna steaks, cut into 4 portions


Salad ingredients


1 cup - Chickpeas, canned, drained and rinsed


300g - Spinach


1 tb - Lemon juice


1 - Tomato, rinsed and cut into wedges


¼ tsp - Salt


¼ tsp - Ground black pepper

UTENSILS

Grill pan, Bowl, Chopping board, Knife

INSTRUCTIONS

1. Combine the oil, garlic, lemon juice and oregano. Brush the mixture over the tuna steaks. Set aside   and marinate for 10 minutes.


2. Combine the chickpeas, spinach, tomato, lemon juice, salt and black pepper in a bowl.


3. Preheat the grill pan over high heat. Grill the tuna on high heat for 3 minutes on each side until the flesh is opaque and done.


4. Serve 1 portion of the tuna steak with 1 cup of the mixed salad.
