
Happiness Prawns with Assorted Fruits and Vegetables

INGREDIENTS
150g - Prawns, peeled and deveined with tails left on
6 - Lychees, skinned and stoned
6 - Longans, skinned and stoned
10 - Cherry tomatoes, cut into half
¼ cup - Mango, diced
¼ cup - Pineapple, diced
1 - Red capsicum, diced
1 - Yellow capsicum, diced
1 - Green capsicum, diced
2 tsp - Vegetable oil
1 tb - Garlic
Seasoning sauce
1 tsp - Sugar
1 tsp - Shaoxing wine
1 tsp - Soy sauce
2 tb - Tomato paste
UTENSILS
Small pot, Bowl, Chopping board, Knife
INSTRUCTIONS
1. Heat the oil in a wok on medium-high heat. Add the prawns and spread them in a single layer. Cook until the prawns turn orange on both sides. Set it aside.
2. Add the garlic and sauté for 1 minute until aromatic. Add the capsicums and sauté for another minute.
3. Add the lychees, longans, cherry tomatoes, pineapple and mango to the wok. Sauté for 1 minute.
4. Add the seasoning sauce to the wok. Cook for 1 minute.
5. Add the prawns back in the wok. Toss for another 30 seconds until prawns are warmed through.
6. Serve.
