
Hearty Turkey Meatloaf Vegetable Soup

INGREDIENTS
2 cups - Turkey meatloaf, crumbled
1 tb - Olive oil
1 - Onion, diced
2 - Carrots, diced
2 stalks - Celery, diced
4 cups - Vegetable broth
2 - Potatoes, diced
1 tsp - Italian seasoning
1 pinch - Salt
1 pinch - Black pepper
UTENSILS
Pot, Chopping board, Knife
INSTRUCTIONS
1. Heat the olive oil in a pot over medium heat. Sauté the onion, carrots and celery until softened.
2. Add the meatloaf and stir. Pour in the broth and bring to a boil.
3. Add the potatoes, Italian seasoning, salt and pepper. Simmer for 20 minutes.
4. Serve hot.
