
Juicy Turkey Meatloaf

INGREDIENTS
450g - Ground turkey, 90% lean
1 tb - Vegetable oil
1 - Onion, finely chopped
2 - Garlic cloves, minced
1 - Egg
¼ cup - Ketchup
¼ cup - Greek yogurt, low fat
½ cup - Quick oats
1 tb - Worcestershire sauce
¾ tsp - Salt
⅓ tsp - Ground black pepper
For the Salad
4 cups - Mixed greens (arugula, spinach or romaine)
1 cup - Cherry tomatoes, halved
1 - Cucumber, thinly sliced
1 - Red onion, thinly sliced
½ cup - Kalamata olives, pitted and halved
¼ cup - Feta cheese, reduced fat, crumbled
3 tb - Olive oil
1 tb - Red wine vinegar
1 tsp - Dijon mustard
½ tsp - Dried oregano
½ tsp - Honey
1 pinch - Salt
1 pinch - Black pepper

Oven, Loaf pan, Parchment paper, Mixing bowl, Skillet, Chopping board, Knife
INSTRUCTIONS
1. Preheat the oven to 175°C. Line a 9×5-inch loaf pan with the parchment paper.
2. Heat the oil in a skillet over medium heat. Add the onion and garlic. Sauté for 5 minutes. Remove from the heat and let cool slightly.
3. In a large mixing bowl, combine the ground turkey, sautéed onion and garlic, egg, ketchup, oats, Greek yogurt, Worcestershire sauce, salt and pepper. Mix gently until just combined.
4. Transfer the mixture to the prepared loaf pan. Press down gently to even out the surface. Spread a thin layer of ketchup on top.
5. Bake for 45 minutes until the top of the meatloaf is lightly browned.
6. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, olives and feta cheese.
7. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, oregano, honey, salt and pepper. Drizzle the dressing over the salad and toss gently to coat.
8. Let the meatloaf cool for at least 5 minutes before slicing. Serve warm with the salad.
