Kasha and Red Dragon Fruit Salad

2 ½ cup - Buckwheat groats, cooked
340g - Dragon fruit, red, diced
2 pcs - Celery, medium stalk, diced
⅛ cup - Onions, spring or scallions, raw, finely chopped
½ cup 1" pieces, loosely packed - Kale, finely chopped
¼ cup - Cheese, feta, crumbled
3 tb - Oil, olive, extra virgin
¼ cup - Vinegar, balsamic
1 tsp - Organic Dijon Mustard
¼ tsp - Salt, table
¼ tsp - Pepper, black
¼ cup - Roasted pumpkin seeds

1. Cook the buckwheat groats (kasha) according to the directions on the package.
2. Combine the extra virgin olive oil, balsamic vinegar, Dijon mustard, salt and pepper in a bowl. Mix well and set aside.
3. Combine the cooked kasha, red dragon fruit, celery, spring onion and parsley in a bowl. Drizzle with the balsamic dressing and toss to combine evenly.
4. Garnish with crumbled feta cheese and pumpkin seed. Serve.
