Macaroni, Chickpea and Cheese

INGREDIENTS
50g - Whole wheat pasta, elbow, dry
½ cup - Water
30g - Chickpeas, canned, drained, rinsed in tap water
3 tb - Soy milk, plain, low fat
⅛ cup - Cheese, brie, thinly sliced
⅛ cup - Cheese, low-sodium, cheddar or Colby, shredded
1 pinch - Black pepper
2 tsp - Parsley, fresh, finely chopped
UTENSILS
Microwave, Microwaveable dish bowl with lid, Chopping board, Knife, Grater
INSTRUCTIONS
1. Combine the macaroni and water in a microwave dish bowl. Cover and microwave on a high setting for 2-3 minutes.
2. Get the macaroni and stir in the soy milk, chickpeas, brie, cheddar cheese and season with black pepper.
3. Cover and microwave for another 1 minute.
4. Garnish with the parsley and serve.
