
Maple-Glazed Chicken with Plum Spinach Rice

INGREDIENTS
2 tb - Butter, without salt
1 tb - Sugar, maple
3 tb - Water
½ tsp - Psyllium, dry
½ cup - Dried plums (prunes), stewed, without added sugar, coarsely chopped
240g - Chicken, rotisserie, barbeque, breast meat only, sliced into strips
1 dash - Salt
¼ tsp - Black pepper
4 cups - Brown rice, long-grain, cooked
4 cups - Spinach, raw
UTENSILS
Non-stick skillet, Plate, Bowl, Chopping board, Knife
INSTRUCTIONS
1. Combine the maple sugar, water and psyllium husk in a bowl. Mix until maple sugar dissolves.
2. Melt the butter in a large non-stick skillet. Add maple-water mixture and dried plums. Simmer for 1 minute.
3. Add the chicken, salt and pepper. Sauté for 1 min. Remove the chicken and place it on a plate. Set aside.
4. Add the brown rice to the same skillet pan and toss to coat with the sauce. Remove from heat. Add spinach and toss again.
5. Dish up and serve with the glazed chicken on top.
