INGREDIENTS

1 cup - Quinoa, rinsed


1 cup - Black beans, canned, drained and rinsed


1 cup - Corn kernels, frozen, thawed


1 - Red capsicum, diced


1 - Avocado, sliced


¼ cup - Cilantro, chopped


1 lime - Lime juice

UTENSILS

Large pot, Chopping board, Knife

INSTRUCTIONS

1. In a large pot, cook the quinoa according to package instructions.


2. After cooking quinoa, fluff it with a fork and divide it into serving bowls.


3. Top the quinoa with black beans, corn kernels, bell pepper, avocado and chopped cilantro.


4. Drizzle the lime juice over the bowls.


5. Serve.
