
Oats and Pumpkin Steamed Cake

INGREDIENTS
1 cup - Oat flour
⅔ cup - Soy flour, low-fat
1 cup - Almond flour
¼ cup - Tapioca flour
¼ cup - Pumpkin, peeled
¼ cup - Apricot, dried, finely chopped
2 tb - Sugar
1 tsp - Vanilla extract
¼ cup - Evaporated milk, reduced fat
2 tsp - Peanut oil
UTENSILS
Tray, Steamer, Mixing bowl, Chopping board, Knife
INSTRUCTIONS
1. Peel, boil, and mash the pumpkin leaving no lumps behind.
2. Mix all the flours, mashed pumpkin, sugar, vanilla extract, apricots, and evaporated milk in a large bowl and form a soft dough batter.
3. Grease the steaming tray with the peanut oil and transfer the dough batter on the same tray.
4. Steam for 15-20 minutes and check for the doneness with the help of a toothpick test.
5. Serve immediately.
