
One Pot Brown Rice with Chicken

INGREDIENTS
1 cup - Rice, brown, long-grain, raw
1 cup - Water
1 ⅔ cup - Soy milk, plain, low fat
1 dash - Salt, table
2 cup - Snap peas, frozen, ends removed
320g - Chicken, rotisserie, BBQ, breast meat only, shredded
⅓ cup - Celery, raw, finely chopped

Large saucepan with lid, Chopping board , Knife
INSTRUCTIONS
1. Combine the soy milk, brown rice, and water in a large saucepan. Bring to a boil over high heat.
2. Reduce heat to simmer, cover and simmer until the rice is tender and most of the liquid is absorbed 15 to 20 minutes. Stir occasionally to avoid burning the bottom of the pan.
3. Add the snap peas and chicken breast. Stir and continue to simmer for 2 mins.
4. Dish up, garnish with chopped celery and serve.
