INGREDIENTS

300g - Chicken breast, sliced


200g - Green beans, trimmed and cut into bite-sized pieces


3 tb - Red curry paste


3 - Kaffir lime leaves, finely sliced


1 tb - Vegetable oil


2 tsp - Fish sauce


½ tb - Palm sugar


4 cloves - Garlic, minced


2 - Red chilies, thinly sliced


2 cups - Brown rice, cooked

UTENSILS

Wok, Chopping board, Knife

INSTRUCTIONS

1. Heat the oil in a wok over medium-high heat. Add the garlic and stir-fry for about 30 seconds until fragrant.


2. Add the chicken and cook until it is cooked through and slightly browned.


3. Push the cooked meat to one side of the wok and add the red curry paste to the empty space. Stir-fry the curry paste for about 1 minute until it becomes fragrant and releases its oils. Mix the cooked meat with the curry paste.


4. Add the green beans. Stir-fry for 2-3 minutes until tender-crisp.


5. Add the fish sauce and palm sugar. Stir well to combine all the ingredients and coat them evenly with the sauce. Adjust the seasoning according to your taste.


6.  Toss in the sliced red chili and kaffir lime leaves. Stir-fry for another 1-2 minutes.


7. Remove from the heat. Serve the Pad Prik King hot with steamed brown rice.
