INGREDIENTS

2 - Tomatoes, raw, medium, finely chopped


1 cup - Cauliflower, raw, grated


1 - Red capsicum, raw, medium, finely chopped


¼ cup - Green peas, frozen


1 tb - Vegetable oil


1 tb - Chili powder


1 tb - Pav bhaji masala


1 dash - Salt


½ cup - Water


4 buns - Pav bun, whole wheat


1 tsp - Butter, unsalted


1 lemon - Lemon juice, raw


½ cup - Coriander (cilantro) leaves, raw


2 - Onions, raw, finely chopped

UTENSILS

Pan with lid, Masher, Grater, Chopping board, Knife

INSTRUCTIONS

1. Heat the pan over medium heat. add the cooking oil.


2. Once the pan heats up, add the tomatoes, red chili powder, pav bhaji masala and salt. Sauté the tomatoes for 2 minutes.


3. Cover the pan and let it cook for 3-4 minutes over medium-low heat.


4. Remove the lid. Add the cauliflower, capsicum, green peas and water.


5. Cover the pan and let it cook for 10-12 minutes over medium-low heat. After every 3-4 minutes, remove the lid and mash the vegetables using a masher.


6. Add the lemon juice and mix well.


7. Turn off the heat. Transfer the bhaji to a serving bowl. Top with the chopped coriander.


8. Heat a pan over medium heat. Add the butter. Place the pave buns on the pan and roast on both sides until crispy.


9. Serve the pav buns with the bhaji and chopped onions.
