
Pea and Mint Soup

INGREDIENTS
2 tb - Vegetable oil
3 - Onions, chopped
3 cloves - Garlic, crushed
5 - Potatoes, chopped
1.5L - Water
500g - Peas, frozen
2 tb - Mint, chopped
¼ tsp - Ground pepper
¼ tsp - Salt
UTENSILS
Saucepan, Blender, Sieve, Chopping board, Knife
INSTRUCTIONS
1. Heat the oil in a saucepan over medium heat. Add the onions and garlic. Cook for 3 minutes.
2. Add the potatoes, water and vegetable stock.
3. Add the peas and bring to the boil. Simmer for 15 minutes until the peas are tender.
4. Puree the soup using a blender and pass the soup through a sieve.
5. Return the soup to the saucepan. Add the mint and bring to a simmer. Cook for 5 minutes.
6. Season with ground pepper and salt.
7. Serve.
