
Pesto and Onion Pasta

INGREDIENTS
2 ½ cup - Chopped green onions
1 tbsp - Olive oil
½ tsp - Salt
¼ cup - Pistachio nuts
1 ½ cup - Dried shiitake mushroom
2 cups - Whole wheat pasta

Measuring cups, Measuring spoons, Pot, Frying pan
INSTRUCTIONS
1. Dry roast the dried Shiitake mushrooms and pistachio nuts on medium heat for a few seconds.
2. Boil a pot of water and add 2 teaspoons of coil. Cook the wholewheat pasta for 5 minutes. Strain and set aside.
3. Heat the olive oil in a pan over medium flame. Add in the chopped green onions and stir fry until aromatic. Remove the green onions, leave aside to cool down.
4. In a blender, blend the Shiitake mushrooms, pistachio nuts and green onions into a fine paste.
5. In the same pan, add in the paste and stir fry till fragrant. Add water if necessary.
6. Plate the cooked wholewheat pasta and serve with the cooked pesto.
