Pork Apple and Arugula Salad

INGREDIENTS

360g - Pork, tenderloin lean only, raw, thinly sliced


¼ tsp - Table salt


¼ tsp - Black pepper


1 tb - Canola oil cooking spray


1 medium - Apple, raw, cut into 1 cm cube


2 tb - Raisins


1 pc - Medium avocado, raw, sliced into 1cm thick


4 cups - Arugula, raw, coarsely chopped


50g - Pecan nuts, dry roasted, without salt added, coarsely chopped


4 tb - Honey mustard dressing

UTENSILS

Non-stick grill pan, Paper towel, Chopping board, Knife

INSTRUCTIONS

1. Season the sliced pork with salt and pepper. Set aside.


2. Heat a non-stick grill pan over medium-high heat and spray with canola cooking spray.


3. Add the pork and grill until the centre is no longer pink, about 4-5 minutes on each side. Dab excess oil using a paper towel and set aside.


4. Arrange the arugula leaves in serving plates and top with apple, raisins, sliced grilled pork, sliced avocado and pecan nuts.


5. Drizzle with honey mustard dressing and serve.
