Pork, Corn and Cannellini Bean Soup

INGREDIENTS
1 tb - Canola oil
200g - Pork tenderloin, lean only, raw, diced
1 tsp - Taco seasoning
¾ cup - Corn kernels, fresh
200g - Cannellini beans, low sodium
½ cup - Salsa sauce, tomato-based
4 cups - Water
UTENSILS
Cooking pot, Chopping board, Knife
INSTRUCTIONS
1. Heat the oil in a cooking pot over medium-high heat. Add the pork and stir fry for 8-10 minutes or until the middle is no longer pink.
2. Stir in the taco seasoning.
3. Add the corn, cannellini beans, salsa and water. Bring the mixture to a boil.
4. Reduce the heat, and simmer uncovered for 8-10 minutes.
5. Skim the fat and ladle it into the serving bowl and serve.
