Pork Stir Fry with Soba Noodles

INGREDIENTS
2 ½ cup - Noodles, soba, boiled
1 tb - Oil, canola
3 pcs - Garlic, cloves
2 tsp - Ginger, raw
1 pc - Small, onions, raw
160g - Lean pork, ground
1 pc - Small, peppers, sweet, red, raw
1 cup - Edamame, frozen, prepared
1 pc - Large, egg, fresh
2 tb - Sauce, soy, reduced salt
20g - Sauce, hot chili, sriracha
4 tb - Nut butter, almond, plain, without salt added
1 tb - Oil, sesame

INSTRUCTIONS
1. Cook the soba noodles according to packaging instructions. Drain and set aside.
2. Heat the canola oil in a wok over medium heat, add garlic, ginger, onion and sauté until light brown. Add the ground pork and stir fry until golden brown, about 10-15 mins.
3. Toss in the bell pepper and edamame. Cover and stir occasionally until tender, about 4 mins.
4. Add the cooked soba noodles, push everything to one side and crack the egg into the skillet. Stir, breaking up the yolk and white until scrambled, then mix into the vegetables and noodles.
5. Add the reduced-sodium soy sauce, hot sauce, and almond butter and mix well. Drizzle with sesame oil, toss and remove from the heat.
6. Dish up and serve.
