
Prosperity Lotus Stir-Fry

INGREDIENTS
1 cup - Lotus root, thinly sliced
½ cup - Carrot, sliced diagonally
20g - Wood ear fungus, soaked and drained
½ cup - Button mushrooms, quartered
½ cup - Sugar snap peas
½ cup - Broccoli florets
1 - Red chili, seeds removed and thinly sliced
1 tb - Vegetable oil
1 tsp - Sesame oil
½-inch pc - Young ginger, julienned
½ tb - Oyster sauce
½ tsp - Salt
¼ tsp - White pepper
2 tb - Water (optional, for consistency)

INSTRUCTIONS
1. Cook the lotus root, broccoli, sugar snap peas, carrot, mushrooms, and wood ear fungus for 2 minutes in a pot of boiling water. Drain and set aside.
2. Heat the vegetable and sesame oils in a wok over medium heat. Sauté the ginger for 30 seconds.
3. Add the parboiled vegetables into the wok. Stir-fry for 2 minutes to mix evenly.
4. Add the oyster sauce, salt, white pepper and water. Mix well.
5. Toss in the red chili. Stir for 30 seconds and remove from heat.
6. Transfer to a serving plate. Serve.
