
Rainbow Quinoa Salad with Citrus Dressing

INGREDIENTS
1 cup - Quinoa, cooked
1 cup - Mixed greens (spinach, arugula, or kale)
½ cup - Cherry tomatoes, halved
¼ cup - Carrots, shredded
½ cup - Pomegranate seeds
2 tb - Fresh parsley, chopped
2 tb - Orange juice
1 tb - Lemon juice
1 tb - Olive oil
1 tsp - Honey
1 pinch - Salt
1 pinch - Black pepper
UTENSILS
Large bowl, Chopping board, Knife
INSTRUCTIONS
1. In a large bowl, combine cooked quinoa, mixed greens, vegetables and pomegranate seeds.
2. Whisk together the citrus dressing ingredients. Pour the sauce over the salad. Toss well.
3. Garnish with the parsley before serving.
