
Red Quinoa Salad with Avocado

INGREDIENTS
1 cup - Red quinoa, uncooked
¼ tsp - Salt
2 cups - Water
¼ cup - Greek yogurt, low fat
2 tb - Lime juice
2 tsp - Olive oil
¼ tsp - Black pepper, ground
1 - Avocado, medium, cut into ¼ -inch cubes
¼ cup - Coriander (cilantro) leaves, raw, coarsely chopped
1 - Cucumber, peeled, seeded, cut into ¼ -inch cubes
2 tb - Sunflower seeds, toasted

INSTRUCTIONS
1. Combine the quinoa and water in a medium pot. Bring to a boil, cover, and reduce the heat. Simmer for 15 minutes. Remove the pot from the heat and let it sit, covered, for 10 minutes. Remove the lid and fluff the quinoa with a fork.
2. In a small bowl, stir together the yogurt, 1 tablespoon of lime juice, oil and pepper.
3. Toss the avocado cubes with the remaining 1 tablespoon of lime juice.
4. Add the dressing, cucumber and cilantro to the quinoa and toss gently. Put the avocado in the same bowl and toss to combine.
5. Sprinkle the salad with the sunflower seeds and serve.
