INGREDIENTS

1 tb – Vegetable oil


1 – Onion, finely chopped


3 cloves – Garlic, minced


1 tsp – Smoked paprika


½ tsp – Dried thyme


1 can (400g) – Butter beans, including liquid


1 – Red bell pepper, thinly sliced


½ cup – Cherry tomatoes, halved


1 lemon – Lemon zest


1 tb – Parmesan cheese, grated


¼ cup – Fresh parsley, chopped


1 pinch – Salt


1 pinch – Ground black pepper


4 slices – Sourdough bread, toasted

UTENSILS

Large skillet, Chopping board, Knife

INSTRUCTIONS

1. Heat the oil in a large skillet over medium heat. Add the chopped onion, cherry tomatoes, and bell pepper. Sauté for 5 minutes.


2. Stir in the minced garlic, smoked paprika, dried thyme, salt and black pepper. Cook for 2 minutes until fragrant.


3. Pour in the butter beans along with the liquid. Stir to combine.


4. Simmer uncovered for 10 minutes, stirring occasionally, until it thickens to a creamy consistency.


5. Remove from the heat and stir in the lemon zest and Parmesan cheese.


6. Garnish with the fresh parsley alongside toasted sourdough bread. Serve.
