
Smashed Beans with Cheese on Crisp Bread

INGREDIENTS
140g - Mixed beans, canned
2 tsp - Lemon juice, freshly squeezed
1 tsp - Olive oil
1 - Tomato, large, chopped
1 tb - Parsley leaves, chopped
25g - Feta cheese, low salt, crumbled
50g - Crisp bread
25g - Rocket leaves, chopped
1 tsp - Black pepper

INSTRUCTIONS
1. Place beans mix, lemon juice and olive oil in a bowl and roughly mash them with a fork.
2. Add tomato, parsley and feta cheese into the bowl, mixing them well. Season with black pepper.
3. Spoon the bean mixture onto crisp breads. Top with rocket leaves and serve.
