INGREDIENTS
30g - Snow fungus, dried, rehydrated overnight in water
10 cups - Water
2 - Asian pear, peeled, cut into bite-sized pieces
40g - Rock sugar
30g - Goji berries, dried
30g - Red dates, dried
30g - Snow fungus, dried, rehydrated overnight in water
UTENSILS
Non-stick pan, Chopping board, Knife
INSTRUCTIONS
1. Trim away the yellow root portion of the rehydrated snow fungus. Tear the snow fungus into small pieces.
2. Add the snow fungus and water to a large pot. Bring to a boil, and reduce the heat to medium-low. Cover and simmer for 30 minutes.
3. Add the pear to the pot. Cover, and cook for another 30 minutes over medium-low heat.
4. Add the rock sugar, goji berries and dates. Cover and simmer the soup over low heat until it is syrupy for 2 hours.
5. Serve.
