Soba Noodles with Asparagus and Pan-seared Prawns

INGREDIENTS

50g - Soba noodles


2 tsp - Lemon juice


½ tsp - Dijon mustard


1 tsp - Extra virgin olive oil


1 tsp - Canola oil


½ - Red onion, cut into wedges


80g - Prawns, shelled and deveined


100g - Asparagus, trimmed & cut into 3cm pieces

UTENSILS

Frying pan, Chopping board, Knife

INSTRUCTIONS

1. Cook the soba noodles according to the packet directions. Rinse and drain. Set aside.


2. Whisk the lemon juice, Dijon mustard and olive oil in a small bowl.


3. Heat the canola oil in a frying pan over medium heat. Cook the onion for a minute.


4. Add the asparagus. Cook for 2 minutes.


5. Add the prawns. Cook until the prawns turn pink and opaque.


6. Top the noodles with the prawns and asparagus. Stir through the vinaigrette.


7. Serve.
