Spicy Paneer Pasta

INGREDIENTS

3 cups - Penne Pasta


350g - Cottage cheese, reduced fat, cut into small pieces


1 cup - Spinach, finely chopped


½ - Red capsicum, finely chopped


1 - Onion, finely chopped


½ cup - Tomato puree, without salt added


1 tsp - Ginger, finely chopped


2 cloves - Garlic, finely chopped


½ tsp - Chili powder


½ tsp - Coriander powder


¼ tsp - Garam masala


¼ tsp - Turmeric


2 tb - Coriander leaves, finely chopped


1 tb - Vegetable oil


1 dash - Salt

Pan, Chopping board, Knife

INSTRUCTIONS

1. To cook the pasta, boil a pot of water. Add the pasta and cook till it becomes soft. Drain and keep aside.


2. In a pan, heat ½ tablespoon of the oil. Sauté the paneer pieces until they change to golden brown colour. Set them aside.


3. Heat the remaining oil in the same pan. Add the onions, ginger and garlic. Sauté till it becomes translucent.


4. Add the tomato puree and salt. Mix well.


5. Add the spinach, capsicum, red chili powder, coriander powder, garam masala, and turmeric powder. Stir to mix well and add 1 cup water.


6. Cover the pan with the lid. Bring it to a boil, and cook until the vegetables are done.


7. Reduce the flame and add the paneer, cooked pasta, tomato sauce and coriander leaves. Mix well.


8. Serve immediately.
