INGREDIENTS

210g -Spinach, raw


3 tb - Peanut butter, reduced sodium


½ tsp - Maple syrups


1 tsp - Rice vinegar


1 tb - Soy sauce, reduced salt


2 tb - Mirin


8g - Sesame seeds, roasted and toasted


6 cups - Water

UTENSILS

Chopping board, Knife, Mixing bowl, Cooking pot

INSTRUCTIONS

1. For the dressing, mix peanut butter, maple syrup, rice vinegar, reduced salt soy sauce and mirin in a bowl. Whisk until smooth and set aside.


2. Boil water with a pinch of salt in a cooking pot.


3. Add the spinach and blanch for about 2-3 minutes.


4. Drain and submerge the spinach in an ice water bath to cool it down. Drain again and softly squeeze out excess water. Transfer to a bowl.


5. Pour the dressing over the spinach and toss until evenly coated.


6. Sprinkle it with roasted sesame seed on top and serve.
