Stir-fried Asparagus Beef

INGREDIENTS

200g - Asparagus, trimmed and cut into 2-inch pieces


¼ - Red capsicum, thinly sliced


1 tb - Vegetable oil


3 cloves - Garlic, minced


1 tsp - Ginger, grated


Beef Marinade


300g - Beef sirloin or flank steak, thinly sliced


1 tb - Light soy sauce


½ tb - Oyster sauce


1 tsp - Cornstarch


1 tsp - Sesame oil


¼ tsp - White pepper


Sauce


1 tb - Light soy sauce


½ tb - Oyster sauce


1 tb - Shaoxing wine


1 tsp - Sugar

INSTRUCTIONS

1. In a bowl, combine the beef slices with soy sauce, oyster sauce, cornstarch, sesame oil, and white pepper. Let it marinate for 15–20 minutes.


2. Mix the light soy sauce, oyster sauce, Shaoxing wine, sugar, and sesame oil in a small bowl. Set aside.


3. Heat ½ tablespoon cooking oil in a wok over medium-high heat. Stir-fry the asparagus and red capsicum for 3 minutes. Remove from the wok and set aside.


4. Add the remaining oil to the wok. Increase the heat to high and stir-fry the garlic and ginger until fragrant.


5. Add the marinated beef and stir-fry for 3 minutes.


6. Return the asparagus and capsicum to the wok. Pour in the prepared sauce.


7. Toss and stir-fry for another 1 minute until the beef is fully cooked and the sauce coats the ingredients.


8. Serve hot over steamed brown rice for a balanced meal.
