Stir-fried Black Fungus

INGREDIENTS

20g - Black fungus, dried


½ - Carrot, sliced into half-moons


2 - Green onions, cut into 2-inch lengths


½ - Onion, thinly sliced


½ tb - Vegetable oil


1 tb - Soy sauce


1 tsp - Garlic, minced


1 tsp - Sugar


1 tb - Sesame oil


1 tsp - Sesame seeds, toasted


1 pinch - Black pepper

UTENSILS

Bowl, Pot, Pan, Chopping board, Knife

INSTRUCTIONS

1. Place the dried black fungus in a large bowl of warm water for at least 20 minutes. Rinse and trim, then tear into bite-sized pieces.


2. Quickly boil the black fungus in water for 1 minute, then drain. Pat them dry.


3. Heat the cooking oil in a pan over medium-high heat. Add the onion, carrot and garlic. Sauté for about 1–2 minutes until the onion turns slightly translucent.


4. Toss in the black fungus. Stir-fry for another 2 minutes.


5. Pour in the soy sauce and sugar. Stir quickly to coat everything evenly. Add the green onions and stir for 30 seconds.


6. Turn off the heat. Drizzle with the sesame oil and sprinkle with sesame seeds and black pepper. Toss one last time.


7. Serve.
