Stir-fried Starch Noodles with Beef and Vegetables (Japchae)

INGREDIENTS

200g - Sweet potato starch noodles


7 cups - Water


1 - Carrot, cut into matchsticks


1 - Onion, thinly sliced


2 - Scallions, cut into 2-inch pieces


150g - Beef sirloin, cut into 2-inch long strips


7 pcs - Shiitake mushrooms, fresh, sliced


1 bunch - Spinach


1 tb - Vegetable oil


⅛ tsp - Salt


Sauce ingredients


¼ tsp - Salt


1 ½ tb - Soy sauce, reduced salt


1 tsp - Sugar


½ tb - Sesame oil


5 cloves - Garlic, minced


1 tsp - Sesame seeds, roasted


¼ tsp - Black pepper powder

UTENSILS

Large non-stick pan, skillet, Bowl, Chopping board, Knife

INSTRUCTIONS

1. Combine all the sauce ingredients in a small bowl. Mix well.


2. Bring 5 cups of water to a boil in a large non-stick pan. Cook the noodles for 8 minutes until completely translucent and soft. Rinse the noodles under cold running water. Drain well.


3. Cut the noodles into 6-inch lengths. Transfer to a large mixing bowl. Add 3 tablespoons of the prepared sauce to the bowl and mix well.


4. Fill the same pan with 2 cups of water. Bring it to a boil. Add the spinach and blanch until cooked. Drain quickly and season with a sprinkle of salt.


5. Add ¼ tablespoon of oil to a skillet. Stir fry the noodles over medium heat for 5 minutes until translucent. Transfer back to the mixing bowl.


6. Heat the remaining oil in the skillet over medium heat. Add the carrot and sprinkle with a pinch of salt. Sauté the carrots for a minute. Push them to one side of the pan.


7. Add the onions to the skillet. Sauté for 3 minutes until translucent. Stir in the scallion and sauté for a minute. Transfer them to the bowl with the noodles.


8. Add the beef and mushrooms with 2 tablespoons of the prepared sauce to the skillet. Stir fry for 5 minutes until the meat is cooked. Transfer to the bowl with the noodles.


9. Add the spinach to the bowl. Toss well.


10. Serve immediately.
